Apple Raisin Loaves Recipe
- 3 x Large eggs
- 1 1/2 c. Vegetable Oil
- 2 c. Apples, minced
- 1 1/2 c. Sugar
- 1 tsp Vanilla
- 3 1/3 c. All-Purpose Flour
- 2 tsp Baking Soda
- 1 tsp Baking Pwdr
- 1 tsp Salt
- 1 tsp Cinnamon
- 1 tsp Cloves
- 2/3 c. Nuts, minced
- 2/3 c. Raisins
- Heat oven to 250 degrees.
- Grease and flour 2 loaf pans, 9x5x3 inches.
- Beat Large eggs, oil, apples, sugar and vanilla on low speed, scrapping bowl occasionally, 1 minute.
- Add in flour, baking soda, baking pwdr, salt, cinnamon and cloves.
- Beat on low speed, scraping bowl occasionally, till moistened, about 15 seconds.
- Beat on medium speed 45 seconds.
- Stir in nuts and raisins.
- Spread in pans.
- Bake till wooden pick inserted in center comes out clean, 55 to 60 min.
- Cold 10 min; remove from pans.
- Cold completely before slicing.
- Chill leftover bread.
