Mocha Frappe Pie

  1. In microwave proof bowl, combine marshmallows, granulated sugar, instant coffee granules and evaporated milk.
  2. Microwave on high for 2 minutes, then remove and stir.
  3. Return to microwave and cook for 1 more minute on high and then stir again.
  4. Mixture should be smooth at this point.
  5. If not, return to microwave and cook for 1 more minute, again on high, and then stir again.
  6. Pour the chocolate chips into the above mixture and then stir until they are completely melted and mixture is well blended.
  7. Spread 3/4 cup of mixture into the bottom of the graham cracker pie crust and spread evenly.
  8. Let mixture remaining in bowl cool for 10-15 minutes.
  9. Beat whipping cream until thick with electric mixer.
  10. Fold whipped cream into the remaining chocolate mixture in the bowl, until well blended.
  11. Spread over chocolate layer in pie shell.
  12. Chill at least 2 hours.
