Mexican Tortilla Lasagna Recipe
- 2 lbs. of grnd beef
- 16 ounce. mild salsa
- 8 ounce. tomato sauce
- 1/2 teaspoon salt
- 1 pt. cottage cheese
- 1 egg
- 12 ounce. Monterey Jack, grated
- 6 ounce. cheddar cheese, grated
- 1 doz. corn tortilla
- Quarter tortillas.
- Fry in warm oil till lightly crisp.
- Drain on paper towels.
- Brown meat, add in salsa and tomato sauce.
- Simmer 5 min.
- In bowl mix cottage cheese, egg and salt.
- In 9 x 13 pan, layer 1/3 meat, 1/2 Monterey Jack, 1/2 cottage cheese mix, 1/2 tortillas.
- Repeat, end with meat on top.
- Sprinkle with cheddar cheese.
- Bake at 350 degrees for 30 min.
