Warm Spinach, Lemon and Walnut Chicken Sandwiches
- 8 slices white, sourdough or ciabatta bread
- 40g baby spinach leaves
- 2 medium chicken breasts, cooked and thinly sliced
- Lemon and Walnut Mayonnaise
- 1/3 cup KRAFT Creamy Egg Mayonnaise
- 1/4 cup sour cream
- 1/4 cup chopped walnut pieces, toasted
- 1 teaspoon grated lemon rind
- Spread bread with butter and brown under a hot grill until golden.
- Top four of the bread slices with spinach leaves and chicken.
- Combine lemon and walnut mayonnaise ingredients and drizzle evenly over chicken.
- Finish with lids, slice and serve.
