Pancake Mix Sweet Potato Cake

  1. Peel the potatoes and cut into 1.5 ~ 2 cm chunks.
  2. Soak in water for about 5 minutes.
  3. Drain the water.
  4. In a bowl, combine the potatoes and 50ml of milk.
  5. Cover with plastic wrap and heat in the microwave (500W) for about 5 minutes or until soft.
  6. Add the butter and condensed milk to the heated potatoes and mix together while mashing with a fork or masher to make the sweet potato cream.
  7. Mash with a pounding motion When finished, set aside to cool.
  8. This sweet potato cream is even delicious just like this.
  9. In a separate bowl, combine the egg and sugar and mix well.
  10. Add the pancake mix and 50 ml of milk and mix well with a whisk.
  11. Add the sweet potato cream from Step 4 and mix well with a whisk.
  12. Line the pan with parchment paper, pour in the batter from Step 6 and spread evenly.
  13. Bake in an oven preheated to 170C for about 40~50 minutes.
  14. It's done when a toothpick inserted in the center comes out clean.
  15. It will shrink a little as it cools.
  16. Dust with powdered sugar if you would like.
