Pancake Mix Sweet Potato Cake
- 1 medium about 250 grams Sweet potato
- 50 ml Milk
- 50 grams Butter
- 50 grams Condensed milk
- 1 Egg
- 30 grams Sugar
- 50 grams Pancake mix
- 50 ml Milk
- Peel the potatoes and cut into 1.5 ~ 2 cm chunks.
- Soak in water for about 5 minutes.
- Drain the water.
- In a bowl, combine the potatoes and 50ml of milk.
- Cover with plastic wrap and heat in the microwave (500W) for about 5 minutes or until soft.
- Add the butter and condensed milk to the heated potatoes and mix together while mashing with a fork or masher to make the sweet potato cream.
- Mash with a pounding motion When finished, set aside to cool.
- This sweet potato cream is even delicious just like this.
- In a separate bowl, combine the egg and sugar and mix well.
- Add the pancake mix and 50 ml of milk and mix well with a whisk.
- Add the sweet potato cream from Step 4 and mix well with a whisk.
- Line the pan with parchment paper, pour in the batter from Step 6 and spread evenly.
- Bake in an oven preheated to 170C for about 40~50 minutes.
- It's done when a toothpick inserted in the center comes out clean.
- It will shrink a little as it cools.
- Dust with powdered sugar if you would like.
