Noodles with Meat Miso Dipping Sauce in 10 Minutes
- 150 grams Pork mince (I use a knife or food processor to make minced meat)
- 2 tbsp Sesame oil
- 1 clove Garlic, chopped finely
- 1 knob Ginger, chopped finely
- 5 cm Chopped spring onion
- 2 tsp or less, or more to your taste Doubanjiang
- 2 tbsp Tianmianjiang (Chinese sweet bean sauce)
- 1 tbsp Oyster sauce (or soy sauce)
- 1 1/2- teaspoons Sugar
- 2 tbsp Sake (optional)
- 300 ml Water
- 100 ml Soy milk (to make it creamy like tonkotsu soup)
- 1/3 tsp or more Salt, pepper and soy sauce
- 1 Szechuan peppercorn
- Have a look at this recipe, if you don't have Chinese-style noodles!
- Pour the sesame oil into a frying pan and add all the ingredients.
- Put the pan on the heat.
- Cook over a low heat until crispy and the oil has turned to red.
- Add the minced pork and 1/3 teaspoon of salt.
- Cook over a medium heat until the meat juice becomes translucent.
- Once the meat becomes crumbly, add the seasonings and fry further.
- Once the meat and seasonings are mixed well, pour in the water.
- Bring to a boil and skim off any scum.
- Add the soy milk if you like.
- Check the taste and adjust it with salt and soy sauce.
- Make a slightly strong-flavoured sauce as this is a dipping sauce.
- Sprinkle with Szechuan peppercorn or black pepper when you serve.
- You can serve this sauce hot or cold.
- If you chill this sauce in the fridge, the spiciness will mild out a bit.
