Pecan Crusted Pork Noisettes
- 13 cup panko breadcrumbs
- 13 cup coursely ground pecans
- 13 cup all-purpose flour
- 1 tablespoon water
- 1 large egg
- 1 (1 lb) pork tenderloin, trimmed crosswise into 8 slices
- 14 teaspoon salt
- 14 teaspoon pepper
- 1 12 teaspoons butter
- Preheat oven to 350 degrees.
- Combine pecans and panko, and spread on a jelly roll pan.
- Bake at 350 degrees for 10 minutes, then place in a shallow dish.
- Place flour in a seperate shallow dish.
- Combine water and egg in a seperate bowl.
- Slice the pork crosswise into 8 slices, and place each pork slice between 2 sheets of heavy-duty plastic wrap.
- Pound to 1/4 inch thickness using a meat mallet.
- Sprinkle pork with salt and pepper, then dredge in flour, and dip in egg mixture, and dredge in breadcrumb mixture.
- Melt butter in a large skillet, over medium-high heat.
- Add half of pork to pan, cook 2 minutes on each side.
- Place pork on a jelly-roll pan.
- Repeat procedure with the remaining pork and butter.
- Bake at 350 degrees for 5 minutes.
