Pecan Crusted Pork Noisettes

  1. Preheat oven to 350 degrees.
  2. Combine pecans and panko, and spread on a jelly roll pan.
  3. Bake at 350 degrees for 10 minutes, then place in a shallow dish.
  4. Place flour in a seperate shallow dish.
  5. Combine water and egg in a seperate bowl.
  6. Slice the pork crosswise into 8 slices, and place each pork slice between 2 sheets of heavy-duty plastic wrap.
  7. Pound to 1/4 inch thickness using a meat mallet.
  8. Sprinkle pork with salt and pepper, then dredge in flour, and dip in egg mixture, and dredge in breadcrumb mixture.
  9. Melt butter in a large skillet, over medium-high heat.
  10. Add half of pork to pan, cook 2 minutes on each side.
  11. Place pork on a jelly-roll pan.
  12. Repeat procedure with the remaining pork and butter.
  13. Bake at 350 degrees for 5 minutes.
