Cream Cheese Raspberry Cake Made with Pancake Mix!
- 1 Cream cheese
- 1 Fruit granola
- 1 Raspberry jam (or strawberry jam)
- 200 grams Pancake mix
- 100 ml Milk (or soy milk)
- 60 grams Butter (margarine)
- 1 Egg
- Mix together the egg and milk.
- Add in the pancake mix and butter (melted in the microwave at 600w for 30 seconds) and combine thoroughly.
- Add the fruit granola and raspberry jam.
- Mix well to make sure the granola blends with the batter.
- Once the jam is mixed in, cut the cream cheese into cubes and lightly mix into the batter.
- Pour the batter into a mold lined with baking parchment.
- If you grease the paper with olive oil, you'll get a nice, baked finish.
- Put jam and cream cheese on top like in the photo, and bake for 45 minutes at 170C.
- Check it to make sure it doesn't burn.
- Let it cool once it has baked.
- Once it has cooled, remove it from the mold and leave it to harden.
- All you have to do now is slice the cake once it has cooled completely!
- Try spreading some heavy cream, or sandwiching the cream between slices -- it's really tasty!
- It's done!
