Mexican Chicken And Rice Recipe

  1. Cut chicken into pcs.
  2. Wash pcs and put in large pot; cover with water and bring to boil, boil till chicken is cooked (approximately 30 to 45 min).
  3. Remove chicken and set aside.
  4. Reserve 2 c. broth and skim off any excess fat.
  5. In large skillet heat oil and add in rice, brown till golden brown; add in onion, green pepper and garlic.
  6. Saute/fry for approximately 1 minute.
  7. Add in diced tomatoes; and chicken broth, stir.
  8. Add in spices.
  9. Add in chicken pcs; cover and reduce heat.
  10. Simmer at medium/low for 15 min.
  11. Let stand 5 min before uncovering.
