Baby Bok Choy With Mushrooms
- 12 tablespoon bacon grease
- 12 tablespoon oil
- 4 garlic cloves, minced
- 6 heads baby bok choy, halved, washed and de-cored
- 12 medium button mushrooms, sliced
- 6 medium cremini mushrooms, sliced
- 1 cup chicken stock
- 1 tablespoon soy sauce
- salt and pepper, to taste
- 2 teaspoons chives, chopped
- In a hot skillet, heat oil and bacon grease.
- Saute garlic until aromatic, about 2 minutes.
- Add bok choy, mushrooms, salt, and pepper and cook for 3 minutes.
- Add stock and soy sauce, simmer for 20-30 minutes.
- Stir in chives.
- Serve hot.
