Zucchini Verrines with Tahini Dressing

  1. Whisk together tahini, lemon juice, and garlic in small bowl.
  2. Stir in 3 Tbs.
  3. water, a few drops at a time, and mix until smooth.
  4. Season with salt and pepper, if desired.
  5. Cover, and chill.
  6. Combine zucchini and mint in bowl.
  7. Season with salt and pepper, if desired.
  8. Divide zucchini among glasses.
  9. Top each with dollop of tahini dressing, and sprinkle with sesame seeds.
  10. Serve with small forks.
