Southwest Roasted Chicken

  1. Heat oven to 375F.
  2. Place lime, onion and garlic inside chicken cavity.
  3. Secure wings to body with string; tie legs together with string.
  4. Combine butter and seasoning in bowl.
  5. Loosen skin on breast; spread 1 tablespoon butter mixture over breast meat under skin and 1 tablespoon inside chicken cavity.
  6. Spread remaining butter mixture over chicken skin.
