Easy Indian Vegetable Rice Recipe

  1. In a heavy pan, heat the oil on medium heat; fry the nuts till they turn golden in color.
  2. Remove from pan and set aside.
  3. Brown onion; stir in ginger, garlic and green chili.
  4. Then stir in cloves, cardamom, bay leaf and cinnamon.
  5. Stir in coriander, cumin and turmeric powders and vegetables.
  6. Fry for 2 min.
  7. Add in rice and salt; stir it well for 1 minute.
  8. Add in water and increase heat.
  9. Boil it for 3 min and reduce heat to low; cover.
  10. After 15 min, stir it well and cover again.
  11. Cook for about 30 min and turn off heat; let it stand for 20 min without removing cover.
  12. Remove from heat.
  13. Remove bay leaf, cinnamon sticks and 3 cloves.
  14. Stir in fried nuts and minced coriander leaves.
  15. Sprinkle with lime juice according to taste.
