Kimbo Mojito
- Mint leaves, minced, plus whole mint leaves, for garnish
- 1 lime, 1/2 cut into slices and 1/2 juiced
- 1/2 to 3/4 cup crushed ice
- 1 shot simple syrup (equal parts sugar and water heated until sugar dissolves), cooled
- 1 shot white rum
- Splash club soda
- In a tall glass, add minced mint leaves and a slice of lime to bottom of glass.
- Fill glass 2/3 of the way with ice.
- Add shot of simple syrup, shot of rum, and juice of 1/2 a lime.
- Stir together and finish off with a splash of club soda.
- Garnish with whole mint leaves and serve immediately.
