Russian Cole Slaw Recipe
- 8 c. cabbage, shredded
- 3 green sweet peppers, minced fine
- 3 red sweet peppers, minced fine
- 1 med. onion, minced fine
- 1 pt. vinegar
- 2 1/2 c. sugar
- 1 1/2 teaspoon mustard seed
- 1 1/2 teaspoon salt
- 1/2 teaspoon turmeric
- 1 teaspoon celery seed
- Mix cabbage, green and red peppers and onion in stainless steel or possibly glass bowl.
- Mix vinegar, sugar, mustard seed, salt, turmeric and celery seed in saucepan; bring to a boil.
- Pour over cabbage mix; mix well.
- Cover, marinate in chill for 24 hrs before serving.
- Two small jars pimento strips, liquid removed, may be substituted for red peppers.
