Vegetable Strata

  1. Place bread cubes in bottom of greased 8 x 8 x 2-inch baking pan; set aside.
  2. Cook and stir carrots, zucchini, onion and garlic in margarine or butter in medium nonstick skillet over medium-high heat until tender-crisp, about 3 minutes; stir in tomato.
  3. Cook 1 to 2 minutes more; spoon over bread cubes.
  4. Blend egg substitute, milk and basil; pour over vegetables in pan.
  5. Bake at 375F for 40 to 45 minutes or until knife inserted in center comes out clean.
  6. Sprinkle with shredded cheese during last 5 minutes of baking.
