Tender Broiled Lamb
- marinade
- 1 cup carnation skim milk (2% or fat-free)
- 14 cup lemon juice or 14 cup vinegar
- 1 garlic clove, minced
- 8 lamb rib chops, trimmed (about 1 1/2 lb)
- 1 tablespoon smoked paprika
- 1 tablespoon brown sugar
- 1 teaspoon garlic powder
- 1 teaspoon dried oregano
- 1 teaspoon salt
- MARINADE: Combine evaporated milk, lemon juice and garlic in a medium bowl.
- Place lamb chops in marinade, cover and refrigerate for 1-4 hours.
- Remove lamb from marinade.
- Wipe off excess marinade.
- Discard all leftover marinade.
- SPICE RUB: Combine all ingredients for spice rub.
- Sprinkle chops with prepared rub.
- Preheat broiler.
- Place lamb chops on a lightly greased broiler pan, 4-5 inches from heat, turning over once, for medium rare, 6-7 minutes in total.
