Manda's Veggie and Noodle Mix-Up

  1. In 6-quart saucepan, over medium heat, cook celery, onion, carrot, cabbage, cauliflower, and garlic in oil until slightly tender (about 10 min.)
  2. Add remaining ingredients, except noodles; bring to boil.
  3. Reduce heat, cover, and simmer 20 minutes.
  4. Add noodles, cover, and simmer 10-15 minutes or until noodles are tender (may have to add some water, up to 1 c., to produce desired consistency).
