Pineapple Carrot Bars Recipe
- 1/3 c. honey
- 2 tbsp. vegetable oil
- 1 teaspoon vanilla extract
- 1 egg
- 1 c. whole wheat flour
- 1 teaspoon baking pwdr
- 1 teaspoon baking soda
- 1 teaspoon grnd cinnamon
- 1 c. carrots, finely shredded
- 1/2 c. raisins
- 3 tbsp. skim lowfat milk
- 1 (8 ounce.) can unsweetened crushed pineapple, liquid removed
- Vegetable cooking spray
- 1 teaspoon powdered sugar, sifted
- Combine first 4 ingredients in a medium bowl; stir well, set aside.
- Combine flour and next 3 ingredients; add in dry ingredients to honey mix, stirring well.
- Add in carrots and next 3 ingredients; stir well.
- Spread mix into a 13 x 9 x 2 inch baking pan coated with cooking spray; bake at 350 degrees for 25 min or possibly till golden brown.
- Sprinkle with powdered sugar; let cold and cut into bars.
- Store loosely covered in refrigerator.
- Makes 2 dozen bars.
