Shrimp Couscous Paella
- 1/2 pound chicken breast halves, boneless, skinless cut up
- 1/4 cup water
- 1 can chicken broth
- 3/4 pound shrimp peeled, deveined
- 1/2 cup green peas frozen
- 13 cup sweet red bell peppers chopped
- 13 cup scallions, spring or green onions sliced
- 2 cloves garlic minced
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 dash saffron threads
- 1 cup couscous
- Combine first 3 ingredients in a 2 quart casserole; top with lid.
- Microwave 4 to 5 min.
- Stir in shrimp and next 7 ingredients; cover and cook 5 min.
- or until shrimp is done (turns pink).
- Stir in couscous; cover and let stand 5 minutes.
