Chewy Cherry Cashew Drops Recipe ivorybigsis
- 3/4 cup unsalted butter, softened (don't use margarine)
- 1/4 cup Butter flavor Shortening
- 3/4 cup granulated sugar
- 3/4 Dark brown sugar, firmly packed
- 2 large eggs
- 1 1/2 teaspoons Pure Vanilla Extract
- 2 2/3 cups unbleached flour
- 1 teaspoon baking soda
- 2/3 cup mashed potato flakes (the inexpensive brands work best!)
- 1 1/3 cups dried tart cherries
- 1 cup salted cashews, coarsely chopped (or macadamias)
- 1 cup premium white chocolate chips or chunks
- In a large bowl, cream together butter, butter flavor shortening, and both sugars, creaming well.
- Add eggs and vanilla.
- In a separate medium bowl, blend flour, baking soda, mashed potato flakes, dried cherries, cashews, and white chocolate chips.
- Gradually add dry mixture to creamed mixture, blending well.
- Chill dough for at least one hour or overnight.
- Preheat oven to 350 degrees F. Drop dough by teaspoonsful onto an ungreased non-stick cookie sheet.
- Bake approx 11 minutes or until slighty underdone and chewy.
- Tranfer to wire rack to cool.
