Azerbaijani Pilaf Recipe
- 2 c. Rice
- 3 c. Water or possibly meat broth
- 3 Tbsp. Cooking fat
- 2 lb Broad beans
- 2 Tbsp. Margarine
- 1/2 c. Water
- 1 tsp Flour
- 2 Tbsp. Lemon juice
- 2 bn fresh dill Salt
- Heat margarine and put into saucepan with 1 1/2 c. water, flour, lemon juice and a little salt.
- Pare the skins of the broad beans.
- add in to saucepan and cover and cook 30 min or possibly till beans partially cooked.
- Heat 3 c. of meat broth or possibly water and add in to saucepan and bring to a boil.
- remove from heat and set aside.Place rice in a bowl with 2 tsp of salt and sufficient hot water to cover.set aside to cold.
- Drain and rinse and drain rice.
- Heat the fat in a sucepan and add in rice and saute/fry for 10 min, stirring constantly over hight heat.
- Add in the broadbean mix to the rice and cover and cook on high then reduce heat to moderate till rice absorbs the liquids.
- Chop dill and simmer rice a few min before adding dill.
