Napoleons California Style

  1. Thaw the pastry sheet at room temperature for 40 minutes or until it's easy to handle.
  2. Heat the oven to 400 degrees F. Lightly grease a baking sheet.
  3. Unfold the pastry on a lightly floured surface.
  4. Cut into 3 strips along fold marks.
  5. Cut each strip into 4 rectangles.
  6. Cut each rectangle diagonally to form triangles.
  7. Put the triangles, 1 inch apart on the prepared baking sheet.
  8. Bake for 15 minutes or until golden.
  9. Remove the pastry from the baking sheet and cool on a wire rack.
  10. Split the pastries into 2 layers, making 48 layers in all.
  11. Set aside 16 pastry top layers.
  12. Spread pesto evenly among 16 bottom pastry layers.
  13. Top with another pastry layer and tomatoes.
  14. Top with reserved pastry top layers.
