Cheesy Potato Skins

  1. Preheat oven to 400F (200C).
  2. Scrub potatoes thoroughly and rub skin with oil.
  3. Bake for 1 hour or until done.
  4. Allow potatoes to cool to touch.
  5. Cut in half lengthwise.
  6. Carefully scoop out pulp, leaving 1/4 to 1/8- inch shells.
  7. (Save pulp for another recipe).
  8. Cut skins in half crosswise and deep fry in hot oil for 2 to 3 minutes until lightly browned.
  9. Drain on paper towels.
  10. Place skins on a baking sheet.
  11. Sprinkle with salt, cheese, and bacon.
  12. Place under broiler until cheese melts.
  13. Serve with sour cream, jalapenos, and picante sauce.
