Holiday Delight Cookies
- 1 14 cups flour
- 12 teaspoon baking soda
- 12 teaspoon salt
- 1 cup firmly packed brown sugar
- 34 cup unsalted butter
- 2 large eggs
- 1 teaspoon vanilla extract
- 2 12 cups old fashioned oats, uncooked
- 1 cup white chocolate chips
- 12 cup pistachios, toasted
- 12 cup dried cranberries
- Preheat oven to 350 degrees F. In a small bowl, combine flour, baking soda and salt; mix well.
- In a large bowl with electric mixer at medium speed, beat sugar and butter until light and fluffy.
- Blend in eggs and vanilla.
- Reduce speed to low and beat in flour mixture until well combined.
- Using a spoon, stir in oats, chocolate chips, pistachios and dried cranberries.
- Drop dough by rounded tablespoonfuls onto a large ungreased cookie sheet, about 2 inches apart.
- (You may line the cookie sheet with parchment paper.)
- Bake 12 to 14 minutes, or until edges are golden.
- Remove cookies to wire rack to cool.
