My Family's Sesame Dipping Sauce (for Shabu Shabu)
- 5 tbsp Toasted sesame seeds
- 1 clove Minced garlic
- 3 tbsp White miso
- 1 dash Ichimi spice
- 1 tbsp Lemon juice
- 1 tbsp Mirin
- 2 tbsp Soy sauce
- 2 tsp Vegetable oil
- 1/2 tsp Salt
- 100 ml Kombu based dashi stock (granules dissolved in water)
- Grind the toasted sesame seeds well in a suribachi (Japanese mortar) until the oil comes out and they become moist (Like in the picture.)
- Add garlic, and continue grinding lightly.
- Add the rest of the ingredients from the top of the list in order.
- Mix well and it's done!
- If the suribachi is too small, when you pour in the dashi stock, transfer the ingredients from the mortar to a larger bowl.
