My Family's Sesame Dipping Sauce (for Shabu Shabu)

  1. Grind the toasted sesame seeds well in a suribachi (Japanese mortar) until the oil comes out and they become moist (Like in the picture.)
  2. Add garlic, and continue grinding lightly.
  3. Add the rest of the ingredients from the top of the list in order.
  4. Mix well and it's done!
  5. If the suribachi is too small, when you pour in the dashi stock, transfer the ingredients from the mortar to a larger bowl.
