Baked Pompano Recipe

  1. Saute/fry shallots in butter.
  2. Place pompano fillets in a shallow buttered baking pan.
  3. Sprinkle generously with the hazelnuts.
  4. Pour melted butter and shallots over pompano and hazelnuts.
  5. Bake 20 min at 450 , basting every 5 min to prevent dryness.
  6. Remove from oven.
  7. Add in the brandy and flame.
  8. When flames die down, broil 2-3 min.
  9. Serving Ideas : Serve with lemon wedges.
