Risoni and zucchini salad
- 200g risoni pasta (or similar)
- 1 tablespoon olive oil
- 1 large red onion, cut into wedges
- 2 gloves garlic, crushed
- 200g green zucchini, sliced lengthways
- 200g yellow zucchini, sliced lengthways (or use yellow squash)
- 200g red grapes Target 1 lb For $2.99 thru 02/06
- 1/2 cup basil leaves
- 1/3 cup KRAFT Italian Dressing
- salt and pepper, to taste
- Cook risoni in boiling water until al dente.
- Rinse in cold water, drain and set aside.
- Heat oil on a BBQ or in a grill pan over a medium-high heat.
- Add onion and garlic and cook 2 minutes.
- Add zucchini and char grill for 3-4 minutes.
- Allow to cool.
- Combine risoni, onion, garlic, zucchini, grapes, basil, dressing and seasoning in a large bowl.
- Serve immediately.
