Risoni and zucchini salad

  1. Cook risoni in boiling water until al dente.
  2. Rinse in cold water, drain and set aside.
  3. Heat oil on a BBQ or in a grill pan over a medium-high heat.
  4. Add onion and garlic and cook 2 minutes.
  5. Add zucchini and char grill for 3-4 minutes.
  6. Allow to cool.
  7. Combine risoni, onion, garlic, zucchini, grapes, basil, dressing and seasoning in a large bowl.
  8. Serve immediately.
