Athenian Salad Recipe
- 1 med Head Lettuce
- 1 bn Romaine
- 10 x Radishes, sliced
- 1 med Cucumber, sliced
- 6 x Green Onions, in 1/2" pcs
- 1/2 c. Extra virgin olive oil
- 1/3 c. Wine Vinegar
- 1 tsp Salt
- 1 tsp Dry Oregano Leaves
- 24 x Greek Olives
- 1/4 c. Crumbled Feta Cheese
- Tear lettuce and romaine into bite-size pcs.
- Place lettuce, romaine, radishes, cucumber, and green onions in a large plastic bag.
- Close bag tightly and chill.
- Shake oil, vinegar, salt, and oregano in tightly covered jar; chill.
- Just before serving, shake dressing.
- Add in dressing and olives to vegetables in bag.
- Close bag tightly and shake till ingredients are well coated.
- Pour salad into large bowl; top with cheese.
