Stir Fry of Broccoli and Chicken

  1. Pound breasts between waxed paper to thickness of 1/4 Inch.
  2. Wrap each chicken breast separately in plastic and freeze until firm but not solid.
  3. Cut chicken crosswise Into 18 inch wide strips.
  4. Cover broccoli with cold water in medium bowl.
  5. Coat heavy skillet with vegetable spray.
  6. Add olive oil and heat over high heat 1 min.
  7. Add red peppers (or green), onion, garlic, basil, thyme, pepper and rosemary to pan.
  8. Stir fry 2 min.
  9. Drain broccoli, but do not shake off excess water and add to skillet.
  10. Stir fry 3 min.
  11. Reduce heat to medium-low, cover and steam 2 min.
  12. Stir in chicken.
  13. Cover and steam util chicken is almost cooked thru, About 1 Min.
  14. Uncover and increase heat and stir fry until liquid reduces slightly, about 1 min.
  15. Divide among heated plates.
  16. Top each portion with 1 tablespoon Parmesan.
