Quick Chestnut Puree from the Plaza Hotel
- 2 (14 ounce) cansunsweetened chestnuts
- 12 cup kerry irish gold sweet butter
- 12 teaspoon salt
- 18 teaspoon grated nutmeg
- 3 -4 tablespoons heavy cream
- Drain and rinse chestnuts.
- Puree them in blender.
- Heat the butter and stir in chestnut puree.
- Stir over very low heat until heated through.
- Season with salt and nutmeg to taste.
- With saucepan still on very low heat, stir in cream a tablespoon at a time.
- Serve at once.
