Quick Chestnut Puree from the Plaza Hotel

  1. Drain and rinse chestnuts.
  2. Puree them in blender.
  3. Heat the butter and stir in chestnut puree.
  4. Stir over very low heat until heated through.
  5. Season with salt and nutmeg to taste.
  6. With saucepan still on very low heat, stir in cream a tablespoon at a time.
  7. Serve at once.
