Smoked Pork Chop Lentil Bake Recipe
- 1 c. minced onion
- 1 clove garlic, chopped
- 2 tbsp. veg. oil
- 2 1/2 c. water
- 1 1/2 c. dry lentils
- 2 med. carrots, minced
- 2 tbsp. snipped parsley
- 2 teaspoon instant chicken bouillon granules
- 1 bay leaf
- 6 smoked pork chips (1 1/2 lbs.)
- Snipped parsley (optional)
- In a 2 qt saucepan, cook onion and garlic in oil till onion is tender but not brown.
- Add in water, lentils, carrots, parsley, bouillon granules, and bay leaf; bring to boiling.
- Reduce heat.
- Cover and simmer 30 min.
- Remove pan from heat.
- Remove and throw away bay leaf.
- Spoon mix into a 12 x 7 1/2 x 2 inch baking dish; arrange pork chops atop.
- Cover and bake at 350 degrees for 25 min.
- Uncover, bake 15 min more.
- Top with additional parsley if you like.
- Makes 6 servings.
