Healthful Oatmeal Cookies
- 1/2 c. butter or margarine
- 1/2 c. vegetable shortening
- 1 c. brown sugar
- 1 c. granulated sugar
- 2 eggs
- 2 c. flour or 1 c. white unbleached and 3/4 c. whole wheat flour
- 1 tsp. baking powder
- 1 tsp. baking soda
- 1 tsp. salt
- 1 tsp. cinnamon
- 1/2 tsp. nutmeg
- 2 c. oatmeal
- 1/8 c. wheat germ
- 1 c. raisins (optional)
- 1 c. grated carrots (optional)
- 1/2 c. chopped pecans
- 1 tsp. vanilla
- Cream butter, shortening and sugars.
- Add eggs, one at a time, beating well after each addition.
- Add vanilla.
- Mix together all dry ingredients (don't sift).
- Add to creamed mixture.
- Stir in raisins, pecans and carrots.
