Black Walnut Loaf Cake Recipe
- 4 c. fresh, peeled and diced apples
- 2 c. brown sugar, packed
- 1 1/2 c. black walnut pcs
- 3 c. flour
- 1/2 tsp cinnamon
- 1/2 tsp salt
- 1/2 tsp soda
- 1 c. vegetable oil
- 1 tsp vanilla
- 2 x well beaten Large eggs
- Mix apples, sugar, and walnuts in bowl and let stand for 1 hour.
- Stir often to allow mix to make own juice.
- Add in flour, cinnamon, salt and soda then add in oil, vanilla and Large eggs and stir thoroughly.
- Stir by hand, not mixer.
- Pour batter into greased and floured tube or possibly loaf pan.
- Bake at 350 degrees for 1 hour, then at 300 degrees for 15 min.
- Cold.
- Remove from pan.
- Serve with whipped cream as garnish.
