Fresh Scollops
- 1 lemon
- 1 tbsp green pesto
- 1 hand full of chopped chillies
- 1 tsp smoked paprika
- 8 fresh local scollops
- 8 pieces of good quality pancetta
- in a bowl put the green pesto,chopped chillies and paprika in a bowl and mix to a smooth paste
- grill the pancetta so its slightly cooked.
- pan fry the Scollops with sprinkle of seasoning for 2mins
- wrap the pancetta around the Scollops and sercure in place finish of under the grill.
- lay the pesto on the plate to put your Scollops on the top serve with a wedge of lemon
- quick,simple starter!
