Raindrop Poke Cupcakes

  1. Prepare cake batter as directed on pkg., using the egg white version.
  2. Pour evenly into 24 paper-lined or greased medium muffin cups, then bake as directed on package.
  3. Cool cupcakes in pan 15 min.
  4. Pierce cupcakes with large fork at 1/4-inch intervals.
  5. Stir boiling water into dry gelatin at least 2 min.
  6. until completely dissolved; spoon over cupcakes.
  7. Refrigerate 3 hours.
  8. Spread whipped topping over cupcakes.
  9. Draw umbrellas on cupcakes with decorating gel.
  10. Sprinkle with colored sugar; top with jelly beans.
  11. Store leftover cupcakes in refrigerator.
