Spicy Guacamole-Chicken Roll-ups
- 1 tbsp. olive oil
- 4 small skinless, boneless chicken breast halves
- 1/4 tsp. salt
- 1/4 tsp. coarsely ground black pepper
- 2 medium avocados
- 1 medium tomato
- 1/4 c. loosely packed fresh cilantro leaves
- 4 tsp. fresh lime juice
- 2 tsp. minced red onion
- 2 tbsp. jalapeno hot sauce
- 4 burrito-size tortillas
- 2 c. sliced iceberg lettuce
- In 10-inch skillet, preferably nonstick, heat oil over medium-high heat until hot.
- Add chicken and sprinkle with 1/4 teaspoon salt and 1/4 teaspoon coarsely ground black pepper.
- Cook chicken, turning once, until juices run clear when thickest part is pierced with tip of knife, about 12 minutes.
- Transfer chicken to plate; set aside 5 minutes or until cool enough to handle.
- Meanwhile, in medium bowl, with rubber spatula, gently stir avocados, tomato, cilantro, lime juice, red onion, hot sauce, and 1/4 teaspoon coarsely ground black pepper until blended.
- With fork, pull chicken into thin shreds.
- Place tortillas on work surface; spread evenly with guacamole, then top with chicken and lettuce.
- Roll tortillas around filling.
