Spicy Guacamole-Chicken Roll-ups

  1. In 10-inch skillet, preferably nonstick, heat oil over medium-high heat until hot.
  2. Add chicken and sprinkle with 1/4 teaspoon salt and 1/4 teaspoon coarsely ground black pepper.
  3. Cook chicken, turning once, until juices run clear when thickest part is pierced with tip of knife, about 12 minutes.
  4. Transfer chicken to plate; set aside 5 minutes or until cool enough to handle.
  5. Meanwhile, in medium bowl, with rubber spatula, gently stir avocados, tomato, cilantro, lime juice, red onion, hot sauce, and 1/4 teaspoon coarsely ground black pepper until blended.
  6. With fork, pull chicken into thin shreds.
  7. Place tortillas on work surface; spread evenly with guacamole, then top with chicken and lettuce.
  8. Roll tortillas around filling.
