Barbecue Sauce
- 8 qt. peeled, coarsely chopped tomatoes
- 2 c. chopped onion
- 1 or 2 c. sugar
- 1 tsp. ground allspice
- 1 c. brown sugar
- 2 Tbsp. hot sauce
- 2 tsp. mustard seed
- 2 to 3 c. vinegar
- 1 c. Worcestershire sauce
- 2 Tbsp. salt
- 2 Tbsp. barbecue spice
- 1 Tbsp. celery seed
- 2 (3 1/2-inch) sticks cinnamon
- Combine all ingredients in large pan.
- Cook over medium heat for 2 to 3 hours or until thickened, stirring occasionally. Remove cinnamon sticks and pour into hot, sterilized jars, leaving 1/2-inch headspace.
- Adjust lids.
- Process 15 minutes in a boiling water bath.
- Yield:
- 4 1/2 quarts.
- (Process tomatoes in blender or food processor for a smoother sauce.)
