Velvet Consomme

  1. Melt butter in large saucepan over medium heat; add flour and cook for a minute or two.
  2. Pour in chicken broth and bring to a boil.
  3. Simmer over low heat for 8-10 minutes.
  4. Add the cream and bring back to a simmer.
  5. Add the dry sherry and season to taste with salt and pepper.
  6. Top with homemade croutons and chives and serve.
