Baby Potatoes Coated with Almonds

  1. Steam potatoes until just tender, about 15 minutes.
  2. Set aside.
  3. Combine the oil, peppers, ginger, almonds & cilantro in a large bowl.
  4. Add potatoes & toss until well coated.
  5. Season with salt & pepper & sprinkle with lemon juice.
  6. Spear potatoes with cocktail sticks; arrange on a platter.
  7. Serve hot, or keep warm in a 250F oven for up to 30 minutes.
  8. *To ground almonds, place blanched almonds in a food processor & pulese until they are reduced to a powder.
