Dreamy Linguini Recipe

  1. Boil and cook linguini per package directions, drain, drizzle with 1 tablespoon of the olive oil, toss and set aside.
  2. While pasta is boiling, in a small saucepan heat the other 1 tablespoon olive oil over low-medium heat.
  3. Add garlic and cook 1 minute.
  4. Add cream, 1/4 cup clam juice, clams, Parmesan, Ricotta salata, lemon juice and salt.
  5. Bring to a boil and turn heat to low.
  6. Cook 2 minutes until thick and cheese is melted.
  7. (The Ricotta will still be a bit chunky, thatas ok, this cheese doesn't melt all the way) Mix in parsley and pour over linguini.
  8. Mix well.
  9. *Ricotta Salata can be found in the 'fancy cheese' section of the grocery store.
  10. You'll probably have to go to a store that sells unique cheese like Whole Foods, Nugget etc.
  11. Its usually sold in a wedge and is very easily crumbled.
  12. If you can't find it use whole milk Ricotta.
  13. (Its well worth it to seek out this cheese, its *amazing* on Puglese drizzled with olive oil)
