Dreamy Linguini Recipe
- 1/2 lb linguini
- 2 tablespoons olive oil
- 2-4 cloves garlic, minced
- 1/2 cup cream
- 2 cans clams, drained and 1/4 cup juice reserved
- 1/2 cup Parmesan cheese, grated
- 1/2 cup crumbled Ricotta Salata cheese*
- 1 tablespoon lemon juice
- A 1/2 teaspoon salt
- 1/2 cup flat-leaf (Italian) parsley, finely chopped
- Boil and cook linguini per package directions, drain, drizzle with 1 tablespoon of the olive oil, toss and set aside.
- While pasta is boiling, in a small saucepan heat the other 1 tablespoon olive oil over low-medium heat.
- Add garlic and cook 1 minute.
- Add cream, 1/4 cup clam juice, clams, Parmesan, Ricotta salata, lemon juice and salt.
- Bring to a boil and turn heat to low.
- Cook 2 minutes until thick and cheese is melted.
- (The Ricotta will still be a bit chunky, thatas ok, this cheese doesn't melt all the way) Mix in parsley and pour over linguini.
- Mix well.
- *Ricotta Salata can be found in the 'fancy cheese' section of the grocery store.
- You'll probably have to go to a store that sells unique cheese like Whole Foods, Nugget etc.
- Its usually sold in a wedge and is very easily crumbled.
- If you can't find it use whole milk Ricotta.
- (Its well worth it to seek out this cheese, its *amazing* on Puglese drizzled with olive oil)
