Diabetic-Friendly Smoked Sausage and Pepper Frittata

  1. Coat the bottom of a cast iron skillet with cooking spray.
  2. Over high heat, cook the turkey sausage until it begins to brown.
  3. Remove the sausage to a plate.
  4. Spray the skillet again and add the peppers and onion.
  5. Cook over medium-high heat until the onions are translucent, about 4 minutes.
  6. While the veggies are cooking, add the egg substitute, cream cheese and black pepper to a blender.
  7. Puree until smooth.
  8. Reduce the heat under the skillet to medium-low and add the turkey sausage to the veggies.
  9. Mix together.
  10. Pour the egg substitute mixture evenly over all.
  11. Cover and cook for approximately 10 minutes until almost set.
  12. Remove the skillet from heat and let sit uncovered for 3-4 minutes.
  13. Cut the frittata into quarters and serve with salsa.
