Pumpkin-Cranberry Muffins

  1. Heat oven to 350 degrees F.
  2. Toss cranberries with 1 Tbsp.
  3. sugar; set aside.
  4. Mix remaining sugar with next 4 ingredients in large bowl.
  5. Whisk remaining ingredients in separate bowl until blended.
  6. Add to flour mixture with cranberries; stir just until moistened.
  7. (Batter will be lumpy.)
  8. Spoon into 12 muffin pan cups sprayed with cooking spray.
  9. Bake 25 min.
  10. or until toothpick inserted in centers comes out clean.
  11. Cool in pan 5 min.
  12. before removing from pan to serve.
