Chicken Alla Romano Recipe
- 1 whole chicken breast, split, boned & skinned
- 1 (1 ounce.) slice Swiss or possibly mozzarella cheese, halved
- 1 thin slice smoked ham, halved
- 3 tbsp. fine dry bread crumbs
- 1 tbsp. grated Parmesan cheese
- 1 teaspoon paprika
- 1/8 teaspoon garlic salt
- Healthy pinch dry whole tarragon
- 2 tbsp. butter
- Or possibly I use the Holly Farms chicken fillets.
- Place each chicken breast on a sheet of waxed paper; flatten to 1/2" thickness, using meat mallet or possibly rolling pin.
- Place a piece of cheese and ham in center of each piece of chicken.
- Roll up lengthwise, and secure with a wooden pick.
- Combine next five ingredients, stirring well.
- Place butter in a 1 c. glass measure; microwave at HIGH 40 seconds or possibly till melted.
- Dip each chicken breast half in butter; roll each piece in crumb mix.
- Place rolls, seam side down in a 1 qt shallow casserole.
- Cover with waxed paper and microwave at HIGH for 4 min or possibly till chicken is fork tender, rotating dish after 2 min or possibly bake in conventional oven at 300 to 325 degrees for 45 to 60 min.
- Yield: 2 servings.
