Butter Roast Beef
- 1 whole Beef Roast, 3-5 Lbs
- 1 stick Butter, Softened
- 1 cup Beef Broth
- 2 Tablespoons Lemon Juice
- Heat a Dutch oven over medium-high heat.
- While the pan is heating, dry the meat and rub the outside of the roast with softened butter.
- Once the pan is very hot, put the roast in and cook until a deep brown crust forms, about 3-5 minutes.
- Flip the roast and sear all sides, including ends, if possible.
- Remove the roast from the pan, but leave the burner on medium-high.
- Add the beef broth to the pan and stir until combined and hot.
- Add lemon juice and stir.
- Turn heat down to medium-low and return the meat to the pan.
- Cover and cook roast for 3-4 hours (depending on size), checking and adding more broth, if necessary.
