Butter Roast Beef

  1. Heat a Dutch oven over medium-high heat.
  2. While the pan is heating, dry the meat and rub the outside of the roast with softened butter.
  3. Once the pan is very hot, put the roast in and cook until a deep brown crust forms, about 3-5 minutes.
  4. Flip the roast and sear all sides, including ends, if possible.
  5. Remove the roast from the pan, but leave the burner on medium-high.
  6. Add the beef broth to the pan and stir until combined and hot.
  7. Add lemon juice and stir.
  8. Turn heat down to medium-low and return the meat to the pan.
  9. Cover and cook roast for 3-4 hours (depending on size), checking and adding more broth, if necessary.
