Broccoli-Rice Casserole
- 1 (10 oz.) pkg. frozen broccoli
- 1/4 c. water
- 3 Tbsp. margarine
- 1 c. chopped onion
- 1/2 c. celery
- 1 (10 oz.) can chicken soup
- 1 (5 oz.) can evaporated milk
- 8 oz. Cheez Whiz
- 1/4 tsp. salt, black pepper and cayenne pepper
- 2 c. cooked rice
- 1/4 c. plain bread crumbs
- In a 2-quart bowl, place broccoli and water.
- Microwave on High 7 minutes.
- Set aside.
- In a 3-quart pan, microwave for 6 minutes the oleo, onion and celery, uncovered.
- Add soup, evaporated milk and Cheez Whiz.
- Microwave on High 7 minutes, covered, stirring.
- Add salt, cayenne and black pepper.
- Add rice and cooked broccoli.
- Microwave on High 10 to 12 minutes, stirring, uncovered.
- Sprinkle with bread crumbs.
- Microwave on High 2 minutes, uncovered.
