Lucy special
- 2 cup uncooked rice
- 1 bell pepper
- 1 small onion
- 2 celery stalks
- 1 lb ground breakfast sausage
- 2 can chicken broth
- Preheat oven to 400
- Break up and brown sausage in large skillet
- Chop onion, celery, and pepper.
- Add to sausage and cook about ten minutes until softened
- Spray large casserole dish with cooking spray.
- Add rice to casserole dish and distribute evenly.
- Spread sausage mixture on top of the rice.
- Pour both cans of broth over everything and seal casserole dish with tinfoil.
- Bake for 1 hour.
