Sea Scallops With Sweet Peppers & Snow Peas Recipe
- 2 tbsp. butter
- 2 tbsp. extra virgin olive oil
- 1 sweet red pepper (cored, seeded & cut into 1/2 inch pcs)
- 1/4 pound snow peas, trimmed & rinsed
- 1/4 teaspoon warm red pepper flakes
- Salt & freshly grnd pepper to taste
- 1 1/4 pound sea scallops (cut into 1/2 inch cubes)
- 4 lbs. shallow or possibly scallions, minced fine
- 2 tbsp. fresh lemon juice
- 3 tbsp. ricard or possibly any other anise flavored liquor
- 4 tbsp. coriander or possibly fresh basil, minced coarse
- Heat 1 Tbsp.
- butter and 1 Tbsp.
- oil on medium-high heat.
- Add in red pepper and snow peas.
- Cook, stirring and tossing about 4 min.
- Add in pepper flakes, salt and pepper.
- When red peppers and snow peas are nearly cooked, add in remaining butter and oil.
- Over high heat add in scallops, shallots, liquor, lemon juice and coriander.
- Cook, stirring about 2 min or possibly till scallops are heated through.
- Don't overcook.
- Serve immediately.
- Makes 4 servings.
