Sea Scallops With Sweet Peppers & Snow Peas Recipe

  1. Heat 1 Tbsp.
  2. butter and 1 Tbsp.
  3. oil on medium-high heat.
  4. Add in red pepper and snow peas.
  5. Cook, stirring and tossing about 4 min.
  6. Add in pepper flakes, salt and pepper.
  7. When red peppers and snow peas are nearly cooked, add in remaining butter and oil.
  8. Over high heat add in scallops, shallots, liquor, lemon juice and coriander.
  9. Cook, stirring about 2 min or possibly till scallops are heated through.
  10. Don't overcook.
  11. Serve immediately.
  12. Makes 4 servings.
