Cowboy Caviar (Without Bottled Dressing)
- 1 can Black Beans (15 Oz. Can), Drained
- 1 can (11 Oz. Size) White Shoepeg Corn, Drained
- 1/4 cups Cilantro, Chopped Fine
- 1/4 cups Red Onion, Chopped Fine
- 1/4 cups Sweet Peppers, Chopped Fine *
- 1 Small Jalapeno, Seeded And Minced **
- 1/2 Avocado, Peeled, Pitted, And Diced
- 2 Tablespoons Canola Oil
- 1 Tablespoon White Vinegar
- 1 Tablespoon Fresh Lime Juice
- 1 clove Garlic, Minced
- 1/2 teaspoons Sugar
- 1/2 teaspoons Salt
- Add beans, corn and other veggies (add the avocado right before serving) into a big bowl.
- Add the oil, vinegar, lime juice, garlic, salt and pepper and toss gently to mix.
- Serve with tortilla chips for dipping.
- * I use mini peppers in red, orange, and yellow.
- ** Leave some or all of the seeds if you want it hot.
- This is easily adaptable if you want to make substitutions, add more or less of something, or leave something out altogether.
