Italian Pasta Salad with Roasted Capsicums

  1. TOSS the oil throught the capsicums and chargrill over a high heat for 3-5 minutes, or until just tender.
  2. Cool
  3. COMBINE the pasta with capsicums, artichokes, parsley and dressing.
  4. Transfer to a serving bowl and sprinkle over Parmesan.
  5. Serve immediately.
